Just because you suddenly know every outcome of every move from this point onwards doesn't mean the damage hasn't already been done. Every choice you've made up to that point has already helped determine your final outcome. Regarding Elizabeth's death by the Big Daddy and why she couldn't prevent it - Imagine in chess, that halfway through a game, suddenly you knew every choice, and where it would lead you. But she won't always see what comes after the outcome if she doesn't choose to. She sees an outcome, and she can choose it.
